The Best Bicuits You Ever Ate

The South is famous for its biscuits--with or without fried chicken, grits and gravy. According to some, "good biscuits will make weak men strong, pretty girls blush and children mind their manners. They may clog your arteries and bust your belt, but you will die with a smile on your face and crumbs on your lips."

Dennis Rogers is a popular Raleigh newspaper columnist. Here is his famous biscuit recipe printed in the News & Observer:


Put 2 cups of self-rising flour in a large bowl. With a pastry blender, cut 1/4 cup unsalted butter and 1/4 cup salted butter into the flour until the mixture is crumbly. This seems to take forever, but it needs to be the consistency of fat BBs.

Add 3/4 cup of buttermilk and stir just until moistened. Turn the dough onto a floured surface and knead lightly 3-4 times. Too much kneading makes them tough.

Roll the dough to 3/4-inch thickness and cut with a 2-inch biscuit cutter. Place on a lightly greased cookie sheet and bake at 450 degrees for 10-12 minutes. If you are feeling naughty, brush with even more melted butter.
